Spinach and Garlic Pita

Sneak in some greens and whole grains with this irresistible dish you wont be able to stop eating! Think cheesy bread meets spinach dip and you have this Spinach and Garlic Pita. Its a whole meal on it’s own or make it as an appetizer! Just a few simple ingredients.

Honestly, I prefer the method of using pita bread for pizza rather than purchasing frozen ones. This way I have more control over the ingredients. Whole wheat pitas are generally easy to find on island. Compared to tortillas, I prefer to thickness of a pita as a pizza base. Adding spinach and fresh tomatoes with some low fat cheese, makes this taste like it came straight from Italy (not your freezer!).

Ingredients

  • 1 pita, whole-wheat
  • 1 wedge Laughing Cow Light Swiss Cheese or 1 tbsp light cream cheese
  • 1 tsp Minced Garlic In Olive Oil
  • 1 cup spinach, chopped
  • 3 cherry tomatoes, sliced in quarters
  • 1 oz Mozzarella, shredded
  • 1 tsp Parmesan, grated
  • Italian Seasoning to taste

    Nutrition: 300 Calories, 16g Protein, 10g Fat, 6g Sat Fat, 38g Carbs, 6g Fiber, 706mg Sodium

Directions

Preheat oven to 400 degrees Fahrenheit. Spread Swiss cheese and garlic onto pita. Top with spinach, tomatoes, mozzarella, Parmesan, and Italian seasoning. Bake for 5-7 minutes. Then broil for 60 seconds for a little extra crisp!
