One Pot recipes are easy and a great way to limit clean up in the kitchen. This is especially handy in a small Caribbean kitchen.

I found this brown Basmati rice at Pricemart for around $8, which I think is a steal. When I keep regular brown rice on hand, I never remember to start it on time and end up going for a grain like quinoa that takes less cooking time. What I really love about it is that it is pre-cooked and only takes less than 15 minutes to prepare.
If you don’t have pre-cooked rice on hand, you can still make this recipe you will just need to add another 1/4-1/2 cup water and simmer for 30-45 minutes until rice is fully cooked.

Ingredients
- 1/2 onion diced
- 1 tbsp diced garlic
- 1 tbsp olive oil
- 15oz can diced tomatoes
- 15oz can black beans, drained and rinsed
- 1 cup quick-cook brown rice
- 1 cup water
- 1 tsp black pepper
- 1 tsp cummin
Directions
In medium saucepan, saute onion, garlic, and oil over med heat until onion start to become translucent. Add tomatoes, pepper, and cummin; stir. Add water and rice; cover and bring to boil. Then reduce heat to med-low and simmer for 12-15 minutes or until rice is tender.
